Pumpkin Protein Bites

Ingredients:

  • 1/3 cup of cooked, mashed pumpkin

  • 1/2 cup of oats.

  • 1/2 cup of almond meal.

  • 1/4 cup of pecan halves.

  • 1 tbsp. of organic honey.

  • 1/2 tsp. of ground cinnamon.

  • 1/2 tsp. of ground ginger.

  • 1/4 tsp of mixed spice.

  • A pinch of nutmeg.

  • Desiccated coconut.

Method:

1. Blitz the oats until they're like a fine crumb.

2. Add the rest of the ingredients and blend until smooth.

3. Add 2-3 tbsp of water if the mixture is too dry.

4. Wet hands and roll mixture into small balls.

5. Pour some of the coconut onto a plate or baking tray and lightly roll the balls around until they are evenly covered in coconut.

6. Cover and leave set for at least 30 minutes.

***They will keep for a week in your fridge (if they last that long 😉)***
