Pepper Pumpkins
Ingredients:
*1lb of lean beef mince (or turkey if you prefer)
*1 red onion
*1 chili (as mild or as spicy as you like)
*3 cloves of garlic
*1/2 cup of rice
*2 handfuls of spinach
*2 bell peppers
*1 tin of chopped tomatoes
*1 beef oxo cube
*1tbsp. olive oil
*1tbsp paprika
*1 tsp of salt
*1 tsp of black pepper
(*add a tin of kidney beans for an added boost of protein)
Method:
1.)Peel the onion and garlic.
2.)Dice onion, garlic and chili.
3.)Add oil to a pan and fry the diced ingredients at a high temperature.
4.)Add the mince of your choice and fry until brown.
5.)Crumble the oxo cube and sprinkle over mince.
6.)Sprinkle the salt, pepper, and paprika evenly over the mince and give it a good stir to coat the mince.
7.)Add a tin of chopped tomatoes and reduce the mixture to a simmer.Stir occasionally at leave to simmer until reduced (*TIP* the longer you leave the mixture to simmer and reduce the tastier it gets 😉).
8.)Pre-heat your oven at fan 200’C.
NOW FOR THE FUN PART!
9.)Gut your bell peppers and carve whatever pumpkin face you wish.
10.)Stuff them with the reduced mince mixture and pop them into a baking tray and cook for 20 minutes. (Or if you prefer raw peppers you can tuck straight in!)
11.)Bring 1½ cups of water to the boil.
12.)Reduce to a simmer and add the rice, cover partially, stirring occasionally until all water has evaporated and you are left with lovely fluffy rice.
